Five lines in the ground right now. Minimum order is 10 cartons of a line, and 133 cartons fill a pallet. Chilli is a market crop and the rate moves week to week. We quote against the day you order rather than publishing a number that is stale by the time you read it.
Picked before it colours, so the flesh stays firm and the heat sits lower than the red. This is the line most kitchens reach for when they want flavour and a slow warmth rather than a hit.

The same fruit as the green, left on the bush until it turns. That extra time on the plant builds sugar as well as heat, so it carries a fruitier front end before the burn arrives.

A small stubby fruit with a thicker wall than its size suggests, which is why it holds up in cooking instead of collapsing. Buyers take it where a long chilli would look wrong on the plate or would not fit the process. It is picked deep red and packed loose.

Long, thin fruit picked green, with a fast clean heat that arrives early and does not sit around. It is a different plant to the long chillies and eats nothing like them despite the colour. It goes into a deeper carton than the rest of our lines, which is why a Thai carton is 7 kg where everything else is 6 kg. Worth flagging on the order so the weights on your end reconcile.

A different species to the long chillies and a large step up in heat. Habanero carries a distinct apricot and citrus note underneath the burn, which is why sauce makers ask for it by name rather than by heat rating. The fruit bruises easily, so it goes into shallow cartons and we pack it the same day it comes off the bush.
